Ingredients:

1 tablespoon oil
2 red onions chopped
Packet of sausages
2 cloves garlic – peeled and crushed
300g dried pasta
200g spinach
300ml single cream

Instructions:

Heat the oil in a large non-stick frying pan. Add onions and fry over a medium heat for 3-4 mins.
Cut the sausages into small chunks and add to the onions along with the garlic.
Cook for 6-8 mins. Add a splash of water if the sausages start sticking to the pan.
Meanwhile, boil the pasta according to the instructions on the packet. Drain it reserving a cupful of the cooking water.
Add the spinach and the cream to the frying pan. Season with salt and pepper. Cook, stirring for 3 mins.
Add the drained pasta to the dish and stir it all together. If it seems a little dry add some of your reserved cooking water. Lovely eaten as it is or with some crusty bread. Feel free to add vegetables of your choice also. Quick and easy dish done in about 20 mins!
