Ingredients:

  • 1-2 teaspoons of Thai green curry paste
  • 1 can of coconut milk
  • Chicken curry into small pieces
  • A potato or two cubed and partly boiled
  • A cup of mixed veg eg baby corn, sugar snap peas, fine green beans chopped into pieces
  • A few lime leaves
  • Rice to serve with

Method:

1. Fry the curry paste in a little oil for a few minutes on a medium heat (use less if you don’t like it too spicy)
2. Add the can of coconut milk
3. Add the chicken pieces and simmer for 10-15 mins.
4. Now is a good time to cook your rice.
5. Next add the potatoes,mixed chopped veg and the lime leaves. Simmer for another 10-15 mins.
6. Serve with rice. Enjoy!
